To cook the chicken:

  • Remove the chicken from the fridge. Holding the chicken on the garbage, tilt the chicken and let the marinade run away. Place the chicken again in a grid or cutting table and use clean kitchen towels or paper towels, dry the chicken on both sides.

I discovered that using a pair of cleaners and cooking towels was very useful.

Insert a meat thermometer into the deepest part of the chicken (where the leg is found with the thigh) and will know that it is ready when the thermometer reaches 165 degrees F.

To rest the chicken:

  • Prepare a small bowl. Remove the chicken from the oven and tilt the chicken so that all the drips fall into a large bowl. Transfer the chicken to a cooling grid to rest. If any drip has fallen while the chicken rests, add the large bowls too.

  • Lower the oven temperature to 400 degrees F.

  • To a baking tray, add the bread and nut cubes. Spray them with olive oil and a few salt pinches; Mix until it is evenly covered.

  • Transfer the bread and nut cubes to a baking tray. Place in the oven and bake until brown evenly for about 10 minutes. Remove and let the ambient temperature slightly, approximately 5 minutes.

  • Meanwhile, in the bowl with the drips, add the red wine vinegar, a few kosher salt pinches, many rounds of black pepper; Give it a flavor and adjust the salt to your liking.

  • Add the curly and radichio and mix until it combines evenly. Then, add the hot nuts and baking bread cubes; Mix until combining one last time. Transfer back to the pan (to serve) or a source. Place the rest chicken on top and serve.

  • You can also carve the chicken and serve it at the top of the salad.
