Who does not love the combination of fruits and chocolate? This classic combination has existed for years and for a good reason! Chocolate raspberry groups combine the sour sweetness of raspberries with rich and soft chocolate, which makes them a perfect pleasure for any occasion. In addition, you don’t need time to prepare these fruity and chocolate treats. The most difficult part is being patient enough to freeze!
How to do the best chocolate raspberry groups:
- Pour the raspberries in a medium mixture bowl and mix them with the back of a fork until they are completely broken down.
- Place the clusters of puree raspberries on a baking tray lined with scroll paper or a silicone baking mat, then transfer the freezer for a minimum of 2 hours or until they are completely frozen.
- Pour white chocolate sparks in a safe microwave bowl with 1 tablespoon of vegetable oil. Microwave in intervals of 30 seconds, stirring in the middle, until it melts and soft.
- Repeat the merger process with semi-dulse chocolate sparks, then cover half of the groups in the melted white chocolate and the other half in the melceful melce chocolate.
- Transfer the remaining white chocolate to a Ziploc bag, cut one end, then sprinkle the white chocolate on the semi-dulce chocolate groups.
- Transfer the remaining semi-dulce chocolate to a Ziploc bag, cut one end, then sprinkle the semi-dulce chocolate on the white chocolate coating groups.
- Return the raspberry groups in chocolate to the freezer for 30 minutes or until it is established.
- Once established, carefully break the excess sweet coating pieces around each cluster before enjoying.
These chocolate raspberry groups are seriously my new favorite gift! They are the perfect spicy and sweet balance, and a great snack to make the spring/summer season. Every time you get the desire for something sweet and chocolate, all you would have to do is get them out of the freezer and enjoy.
This recipe can be customized to any type of chocolate you want. I like the combination of semi-dulce and white chocolate, but using only one is perfectly well and completely based on personal preference!
I am a great believer in keeping it simple. And these chocolate raspberry groups are a perfect example. Made with just a few ingredients, but so tasty, they will satisfy their chocolate cravings in a short time!
My best tips:
- Aligning your pan: Do not skip your pan with scroll paper or a silicone carpet! This is very important, especially when covering chocolate raspberry groups. The lining of your pan prevents it from sticking and facilitates taking off the clusters once they are configured.
- Raspberries: Frozen raspberries are as good as fresh, since they are frozen with flash to maturity peak, and all we are doing is mixing them anyway! Here I enjoy the taste of fresh raspberries, but do not hesitate to sweeten them with a little honey or sugar if you wish.
- FREEZING: You will want to completely freeze these chocolate raspberry groups before covering them in melted chocolate. This ensures that the groups maintain their shape when they throw themselves into the chocolate bowl.
- Melted chocolate: I recommend chocolate microwaves at 30 second intervals to avoid any burning. I also like adding vegetable oil to chocolate to lose weight a bit and make it a better consistency for coating. You could use coconut oil for a similar result.
- Working quickly: These frozen raspberries will melt rapidly, so I recommend covering them in chocolate immediately after removing them from freezer. If they begin to soften, return them to the freezer to reaffirm before continuing to cover them in chocolate.
- COATING: After covering each cluster, touch against the bowl so that excess chocolate drips. He will also want to scrape all excess chocolate in the background so that he does not believe a pool or “foot” of chocolate once placed on the baking tray.
- Chocolate drizzle: It seems useful to transfer the remaining melted chocolate to the Ziploc bags before cutting one end and drizzling. This makes chocolate drizzle more uniform and keeps things free of disaster.
- Storage: Once the chocolate raspberry groups are configured, transfer them to a hermetic container and keep them in the freezer for up to 2 months. I recommend letting them sit at the counter for 1-2 minutes before biting them, this allows them to soften a little!
